Particular Garnacha

Born from strong, brave and wild vines, grown at high altitude, the Particular Garnacha 2017 is a very clean, intense and bright wine. A drawing of a cross on its label reminds us the ancient way in which winegrowers marked their bottles to differentiate them from each other in the cellar.

Deeply cherry coloured with violet tones. A nose of intense aromas, with hints of ripe red fruits and floral tones. Tasty, harmonius, very well balanced and well structured on the palate. A long, soft and smooth finish, with lovely integrated tannins. Serving temperature: 16º – 18º C Pairing: ideal for oily fish, roasts, white meat and grilled cold meat.
Maceration and fermentation is made in stainless steel tanks during a minimum period of 25 days, with daily remontages during the whole fermentation process. Right after grape-juice is separated from the solid part of the grapes, which are pressed. The grape-juice is transferred to other tanks to go through malolactic fermentation. Afterwards, the wine is transferred for its stabilization.

Particular Garnacha Rosé

An excellent wine that has been cold macerated during few hours with the grape skins. Hence its pale pink. Crystalline. With violet shades. Fresh and fruity aroma. Tasty and elegant in the mouth.

Cold maceration wine, only a few hours in contact with the grapes skins. Fermentation in stainless steel tanks with a controlled temperature between 14 and 16 ºC.

Particular Chardonnay Moscatel de Alejandría

This soft and aromatic white wine is made with grapes of small and round grain, and it becomes the finest from Chardonnay and Muscat of Alexandria varieties.
The cross drawn in its label represents the work of ancient winegrowers who marked their barrels in this way to differentiate them from each other. Elegant and fleshy, this wine is the perfect choice to be enjoyed every day.

Bright, pale yellow with greenish hues. Ample, intensely varietal aromas. On the palate it is dry, soft in the entry, with a nice and cool acidity.
Serving temperature: 5º – 8º C
Pairing: fish and all types of seafood.
Skin contact maceration at a low temperature is made for 4 hours. Grape-juice decanted into tanks to be settled for 12 hours. Finally, the wine is transferred to fermentation tanks at a temperature between 16ºC and 18ºC until bottling.

Particular Cariñena

Influenced by the Mediterranean sun and the stony terroirs where it comes from, this red wine transmits all the character from this region. 100% Cariñena variety, it is a fresh, mineral and silky wine that fascinates with its pure aromas. The ideal choice matching with all types of meat.

Deeply cherry coloured with maroon tones. Concentrated aromas of ripe fruits and spicy notes. Good acidity, typical of the variety. Well structured, fleshy and well balanced on the palate, with a very ample and enveloping finish.
Service temperature: 15º – 17º C
Pairing: it goes well with all types of meat, stews and roasts, as well as with big game, cold meat and cured cheese.
Pre-fermentation cold maceration during five days, at a temperature of 10ºC. Temperature is progressively increased, up to 28ºC-30ºC, macerating during other 30 days, with daily remontages until finishing fermentation. Malolactic fermentation into tanks, decantation and stabilization. Aging in American oak barrels during a minimum of 6 months, to be aged in bottles aftewards.

Particular Chardonnay fermentado en barrica

Bright and aromatic Chardonnay made with grapes from vineyards especially selected because of their altitude and type of soil, peculiarity reflected on its labelled. Its particular origin and its careful making process, turn this white wine into an extraordinary one.

Bright, pale yellow with greenish hues, it is an intense wine, with vegetable fresh notes and hints of smoke and toasted oak. Ample and well balanced on the palate, tasty in the entry, with an aromatic and harmonius finish. Serving temperature: 10º – 12º C Pairing: smoked food, white meat, fish and all kind of appetizers.

Skin contact maceration at a low temperature for 6-8 hours. Grapes are separated from the stems and pressed softly. Decantation of grape-juice into tanks made for 12 hours. Afterwards the wine is transferred to French oak barrels, remaining there during three months, with weekly batonnages.

Particular Garnacha Old Vine

It is made with the queen of our vineyards, the Garnacha from our old vines coming from a unique terroir characterized by its stony soil and the extreme climatological conditions in which vineyards grow. As a result, these vineyards give bunches of smaller, concentrated, intense and aromatic grapes. It is a powerful, tasty and complex wine that will surprise the most exigent palates.

Deeply cherry coloured, well covered, it has aromas of black ripe fruits, with balsamic hints and subtly spiced, given by its aging in barrels. On the palate, it has a powerful entry, juicy and very tasty, with good persistence of retronasal aroma, fruity and ripe.
Serving temperature: 16º – 18º C
Pairing: ideal for all types of meat, mainly red meat and stew, and for oily fish.
Maceration, previous and after the fermentation, lasts 30 days, with daily remontages controlling temperature between 28ºC and 30ºC. After malolactic fermentation in barrels during one month, the wine is transferred to tanks for its stabilization and aging in barrels during a minimum period of 6 months and a maximum of 14 months. Finally, it is aged in bottles.

Particular Garnacha Viñas Centenarias

It is an elegant and restrained wine of exceptional quality, made from grapes growing in our oldest vineyards. 100% Grenache, it is a full-bodied, aromatic, soft and balanced vintage wine. It is the perfect choice to enjoy in especial occasions.

A la vista este vino nos ofrece un intenso color rojo cereza, bien cubierto, con ribetes granates y tonos violáceos. En nariz es muy franco, con intensos aromas a frutos maduros y especiados, torrefactos sobre un fondo balsámico. En boca se presenta estructurado, sabroso y potente, con unos finos taninos, suaves y equilibrados, que contribuyen a alargar su vida para acabar con un final en boca largo y elegante.
Temperatura de Servicio: 16º – 18º C
Maridaje: Para acompañar carnes rojas, estofados, quesos curados y todo tipo de carnes de caza.
La maceración pre fermentativa y post fermentativa se realiza durante 30-35 días, con remontados diarios, controlando la temperatura hasta un máximo de 28ºC. Tras la fermentación maloláctica en barrica, se deja reposar durante dos meses (temperatura controlada). A continuación se hace el trasiego a depósito para su estabilización y seguidamente a crianza en barrica, donde permanecerá un mínimo de 12 meses (temperatura controlada). Finalmente, se pasa a crianza en botella donde termina de afinarse durante un mínimo 18 meses.
