Monte Ducay

Monte Ducay is a very unique, exclusive terroir in the Cariñena winegrowing region. Following a process of disentailment it was publicly owned before passing into private hands and being sold off in plots. All that remains from this landowner is his surname (Ducay) and the memory that one of his friends, the Aragonese intellectual Joaquín Costa, accompanied him when the ground was first ploughed up and turned into farmland.

It consists of very deep stony soil, which is what gives it its personality. The stones have a dual function: they allow the water to filter through to the lower layers of earth rather than building up on the surface, with the subsequent risk of disease, and remain underneath the soil for a greater length of time. At the same time, the stones accumulate heat from the sun and then give it out at night, creating a microclimate which is very specific to the region.

The fruit on the vines in this area ripens less than in other places and the grapes are smaller in size. This means there is a higher concentration of components (with less water) which is later transferred to the wines. These have very intense aromas and heightened levels of what is known in the wine industry as ‘expressiveness’. In 1969 Bodegas San Valero created their Monte Ducay range to identify their best wines, which has subsequently been extended with the inclusion of a selection of other wines.

Young aromatic and flavoursome red wine that combines the best of the three grape varieties (GarnachaTempranillo and Cabernet Sauvignon), making it the perfect companion for any meal featuring roast dishes, white meats and sausages cooked on the grill.

Cherry red with garnet and violet tones; clean and bright. Nose: fine and elegant aromas, with notes of ripe red fruitson a floral background. Fresh, flavoursome and very full in the mouth, with friendly tannins and an elegant finish.

Serving temperature: 16-18 ºC.

Pairing: oily fish, roast dishes, white meats and sausages cooked on the grill.

Macerated and fermented in stainless steel tanks for eight days at a temperature of 26-28ºC.

Varieties: Garnacha, Tempranillo and Cabernet Sauvignon

Monte Ducay white

Macabeo and Chardonnay grapes reach their maximum expression in this clean, bright wine, with aromas of flowers and fresh fruits.

Pale yellow hue with hints of green; clean and bright. Clean and aromatic in the nose, with floral tones and notes of fresh fruit. On the palate it is well-balanced with a fresh, lively acidity. Retronasally, it presents a further suggestion of fruitiness.

Serving temperature: 5-8 ºC.

Pairing: starters, lightly cooked white fish, and shellfish.

Macerated and fermented in stainless steel tanks for three days at a temperature of 14-16ºC.

Varieties: Macabeo and Chardonnay.

Monte Ducay rosé

Fresh and flavoursome, made from excellent Garnacha and Cabernet Sauvignon grapes. This carefreeness of this young wine makes it a wonderful companion for all types of rice and pasta dishes.

Raspberry red with violet tones; clean and bright. Strong aromas with notes of red fruits layered on fresh and pleasant floral sensations. Fresh and flavoursome on the palate, with a cheerful, well-integrated acidity; fleshy and generous in its passage leaving a wonderful finish.

Serving temperature: 5-8 ºC.

Pairing: starters, rice dishes, pasta, oily fish and white meats.

Macerated for six hours before fermentation in stainless steel tanks at a temperature of 14-16ºC.

Varieties: Garnacha and Cabernet Sauvignon

Monte Ducay Cariñena Oak Aged

Its limited period of ageing in American oak barrels gives it the intensity typical of the most elegant and well-balanced red wines. Garnacha and Syrah come together here to leave some very pleasant sensations on the palate.

Dark cherry red. Intense aromas of red fruits with balsamic notes. Fine and elegant in the mouth, a full, well-balanced wood and tannin passage. Very nice.

Serving temperature: 16-18 ºC.

Pairing: stews, game, red meats, roast dishes and cured cheese.

Macerated and fermented in stainless steel tanks for ten days at a temperature of 26-28ºC. Aged in American oak barrels for three months.

Varieties: Garnacha and Syrah.

Ageing: 3 months in American oak barrels.

Monte Ducay crianza

Made with GarnachaMerlot and Syrah and aged in American oak barrels to offer elegance, exquisite flavour and balance. An ideal option to accompany game and red meats.

Cherry red. Elegant in the nose, with notes of red fruit that are well assembled with the wood of the barrel. Flavoursome, smooth and well-balanced as it slides over the palate.

Serving temperature: 16-18 ºC.

Pairing: stews, game, red meats, roast dishes and cured cheese.

Macerated and fermented in stainless steel tanks for ten days at a temperature of 26-28ºC. Aged in American oak barrels for eight months.

Monte Ducay reserva pergamino

The mix of GarnachaTempranillo and Cabernet Sauvignon, together with the long ageing process in oak barrels, lend it characteristics that make it an excellent wine.

However, what we really like about it is not its quality but the fact that it represents the social commitment of the winery.*

*The parchment wrapped around it is the product of the careful handiwork of two disadvantaged groups in Cariñena: unemployed women and young people with intellectual disabilities from the Fundación Benito Ardid. This is the social stake assumed by BSV in its local environment and the quality of life of the people with a high risk of unemployment.

Cherry red tinged with brick-coloured hues. Nose, with a combination of spicy aromas typical of wood with ripe fruit. Generous and flavoursome on the palate, with persistent sweet tannins that leave us with pleasant memories in the mouth.

Serving temperature: 16-18 ºC.

Pairing: red meats, game, stews, baby lamb, cured cheese and roast dishes.

Macerated and fermented in stainless steel tanks for eight days at a temperature of 26-28ºC. Aged in American oak barrels for thirteen months before spending a further 24 months in bottles.

Varieties: Garnacha, Tempranillo and Cabernet Sauvignon.

Ageing: Minimum of 36 months with at least 12 in oak barrels and then resting in bottles.

Monte Ducay gran reserva

Complex and aromatic, this is one of the most exclusive wines in the Monte Ducay collection. Produced with GarnachaTempranillo and Cabernet Sauvignon grapes, carefully treated throughout the entire wine-making process, this gran reserva is a unique wine experience destined for the most demanding of palates

Ruby red covered with a layer of brick-red hues. Generous range of aromatic nuances brimming with complexity; noble wood, balsamic sensations and hints of leather. Flavourful, with a spicy background and a finish leaving pleasant memories.

Serving temperature: 18-19 ºC.

MPairing: stews, baby lamb, game, red meats, roast dishes and cured cheese.

Macerated and fermented in stainless steel tanks for fifteen days at a temperature of 26-28ºC. Aged in American oak barrels for twenty months before resting in bottles for a further 38 months.

Varieties: Garnacha, Tempranillo and Cabernet Sauvignon.

Ageing: minimum of 18 months in the barrel, with subsequent ageing in the bottle.
