Cava Gran Ducay

Gran Ducay is an Aragonese cava, or sparkling wine, that is made using the traditional method involving a second fermentation in the bottle, which protects its 100% quality as a limited edition craft wine, just like in the times when it was made purely for the consumption of the winery’s 700 associates.

Gran Ducay is produced from grapes grown in the region known as Monte Ducay, which is one of the most characteristic terroirs in Cariñena and highly valued for its soil. This is the place that gives the winery its name and from where some of its most emblematic wines are created.

Gran Ducay is a brut nature cava that comes in three formats: whiterosé, and reserva, all of which have enjoyed great prestige in international competitions and specialist publications on account of their excellent combination of taste, aroma and bubbles.

Cava Gran Ducay “Brut Nature”

The three traditional varieties of grapes: MacabeoXarel.lo and Parellada produce a fresh and elegant cava, and associate it with the terroir from which it originated.

It has a fine bubble characteristic of the most excellent of sparkling wines and is exquisite and well-balanced on the palate. The ideal option to accompany all types of appetizers and some main dishes.

Clear, golden yellow hue with hints of green and appropriate bubbles developing from the lightness of its carbonation. With a nose of elegant ripe aromas, and intense notes of citrus fruit, with slight hints of sur lie ageing. Fresh and dry in the mouth thanks to good acidity and pleasant sensations from the bubbles. Serving temperature: 8-10 ºC

Pairing: appetizers and starters

Like all cavas produced using the traditional method, after tirage (addition of liqueur with sugar (dosage) and yeast to the base wine), our Gran Ducay goes through a second fermentation process in the bottle.

It then stands for a minimum of nine months in a horizontal position, with the wine in CONTACT with the lees, until they are riddled (remuage) with the bottle being placed upside down so that the lees can accumulate in its neck.

Disgorging consists of removing all the sediment with the minimum loss of bubble. Once this has been done, the liquid that has been withdrawn is replaced with more liquid taken from other bottles and then corked.

Cava Gran Ducay “Brut Nature” Rosé

The excellent garnachas of Cariñena are the reason for the exceptional nature of this cava rosé in which we have striven for quality and elegance.

Amazingly fruity, this is an exclusive sparkling wine owing to its limited edition, with a maximum number of 7,500 bottles a year.

Delicate cool pink in colour with clearly visible constant light bubbles. Intense and complex, elegant aromas of red fruit, in combination with soft hints of sur lie ageing. Good acidity making it dry and fresh on the palate, with balance and flavour, and pleasant sensations from carbonation.

Serving temperature: 5-6ºC

Pairing: appetizers and starters, and fish, poultry, white meats and risottos.

Gran Ducay Brut Nature Reserva is the maximum expression of cava. It is the perfect combination of flavours contributed by the three traditional white grapes (Macabeo, Parellada and Xarel.lo) and the aromas of the yeast. This is all due to ageing in the bottle for 15 months and in the silence of the winery’s underground cellars.

It is an elegant, complex cava, highly expressive and full of quality – perfect for maximum enjoyment.

Pale yellow hue denoting the excellent ageing of a cava reserva. Fine bubbles and true integration. Aromas of ripe fruit with hints of dry fruit due to long sur lie ageing. Freshness and balance in the mouth.
